Setting gap on 560D tappets

I've had the head surfaced and new valve work on my 560D. The head is back on and the new bolts torqued. I understand the valve tappet setting is 0.027 inches on intake and exhaust. I'm thinking I should set the tappets before I start it, because the former settings will possibly prevent the new valves from closing, since the head was surfaced flat. Is it correct to simply set the "loose" tappets to 0.027 and rotate the engine to assure each valve is not being opened and set each tappet accordingly? I guess I'm not sure how to tell when each push rod is off the cam lobe, to be able to set the 0.027. I also understand that I should retorque the head bolts after running the engine up to normal operating temperature. Should the valve tappets be checked at operating temperature to assure they are still at 0.027? I appreciate any experience anyone has had. Also, I plan to generously oil the tappet area, prior to starting, to assure lubrication prior to the normal oil being pumped to this area. Is this correct? Thanks.
