In a piston driven airplane they have a cure for the problem called a carb heat knob. You duct heat from the exhaust manifold to a piece of sheetmetal surrounding the carb. In the extreme form of the sweating carb you saw, ice will build up inside the carb literally choking off the flow of fuel and air. You end up trying to dead stick your little bird into a safe controlled crash. The basic rule is that when air temp and dew point are within 20 degrees of one another, you can expect some carb condensation / cooling / icing.
