Assuming you're not hearing a metallic knock sound but instead a "poof" kind of noise out of the intake -- my guess would be ignition. When you say rain - moisture, humidity - I'd guess some water is shorting out something and making a plug fire weak and early while an intake valve is still open.

Used to have a 4 cylinder car that would backfire thru the carb when it rained. Spraying acetone on the inside of the distributor cap, then wiping the inside of the cap clean plus a few strokes across the points with a file always seemed to fix it. Maybe that approach might work for your 300.
