I had the right idea, but I kinda screwed the procedure up, so I'm copying this out of a Chilton's book for you.
Start the engine cold, remove the radiator cap, and insert a theometer into the radiator. Allow the engine to idle. After a short while, there will be a sudden, rapid increase in coolant temperature. The temperature at which this sharp rise stops is the thermostat opening temperature.
