HEAD GASKET: Witch side faces down?

This might sound like a dumb question,but Im putting a head gasket on a 130 Farmall(C-123 engine)and Im not 100% sure how it goes. It has "This side out" stamped on it,but what does "Out" exactly mean? I I could see if it said up or down. One side is completely smooth where the other side has about a 1/8 ring going out around clylinder hole. Any help would be great. Thank You!!
