As others said, get it rolling in 4th then wind it up and “double clutch” and shift to 5th while rolling. If you can get your M rolling by staring in 5th without having what you describe as happening, let us know how you do it without smoking the clutch. In case you haven’t heard the term “double clutch” before here is how you do it. When you get rolling good speed in 4th, step on the clutch, pull the shifter into neutral and idle the engine down and let the clutch out at the same time. This will slow the input shaft speed to closer to the pinion shaft seed. When the engine speed is close to idle, step on the clutch again (the double) and shift into 5th. With practice this procedure will greatly reduce if not totally eliminate the “clash” or grinding when you shift from 4th to 5th.
