International 300, rear end fluid white

I just bought an International 300 Utility on a farm auction, and I was checking things out. I was trying to find out where you check the fluid level for the transmission/rear end and turned out a couple plugs. White fluid flowed from these plugs, and from what I know that means water in the oil. How and where would water get in this oil? Also, where should I check the fluid level for the transmission/rear end and what type of oil should I use? Thanks for reading this and any help is appreciated.
