Milling SC Flywheel

I am in the process of renewing the clutch system on my SC.
The contact surface on the flywheel is glazed and shows cracks
from overheating. The cracks run from the center towards the
outside of the flywheel (across the surface). I plan to turn the
flywheel on a lathe to renew the surface. How much material
can I safely remove from the flywheel surface and still have a
workable clutch?

Yes, I will be replacing the clutch and pressure plate along with
the TO bearing and the pilot bushing.
