Mike, normally the spring part of a thermostat goes toward the engine. Many things can influence an engine to run hot. Items to check are; is the gauge a "good one" and is it accurately indicating the actual conditions,is the radiator filled completely, is the radiator clogged internally or externally, are the hoses collapsed or sucked shut, is the fan belt slipping, did the fan blade have a shroud and is it there, is the engine timing set correctly, are there bubbles escaping from the coolant with the engine running and the cap off the radiator (blown head gasket) Check these items out and report back.
