The 540 Prince pump is also sold as a 1000 RPM pump. Prince just changes the splines. The pumps are also sold with different width gears for different displacements. Chances are that you have a small displacement unit. I wouldn't worry about overspeed.
The biggest pulley or sprocket that will fit is 7". 6" or 6.5" is easier to fit. I would stay away from a roller chain due to oiling requirements in a dusty atmosphere. Use a Gilmer tooth belt or two groove pulley.
