I was in college, living in a duplex apartment building in the city. One Sunday morning, the x-wife woke me up & said something was dead in the hallway. I asked her what the hell is was talking about; she said a rat or something must be dead in the hallway, because she could smell it.
I walked to the door, opened it.....and determined that my city-raised x-wife had never smelled chittlin's boiling!
My chittlin cookin' is almost like yours. I put the pot on the side burner of the gas grill & slowly boil them for about 4 hours. Wash 'em again & batter in corn meal (not flour).
Lot's of black pepper, plenty of vinegar.
Plenty folks just eat them boiled; not me!
And, boiling first is the best way to cook salt fatback. Cut it in strips, boil it for 5 minutes, drain it, then fry it.
