Yes years ago eggs were old by the time they reached the store. Heck years ago we use to cut down trees with a two man hand saw instead of a chain saw but what does that have to do with today.
Federal laws govern the grading of shell eggs now. Federal law does not mandate these rules but to carry the USDA grade label they must meet these rules. And how often have you seen eggs in the store without a USDA grade on them.
They must be eggs of current production; that means they are less than 21 to 30 days old. I would have to go look it up to be sure of the exact time because the laws changed so often. They can not possess any undesirable odors or flavors And they can not have previously been shipped for retail sale.
It was a common practice back in the 80's to ship eggs out with a sell by date that met federal standards and if they did not sell to bring them back and repackage them. That is not allowed anymore. It was also common in the 50's to store eggs in refrigerate warehouses for off production seasons like winter; but not allowed anymore.
