I would expect vacuum advance not working, accelerator pump bad or power jets stuck down.
Quadrajets are super simple.
Pull the hose off the vacuum advance, engine should sound noticeably blah and should be vacuum on hose. You should see a good squirt into the lower part of carburetor front venturi's when you pump it and feel the resistance. You can take a small screwdriver down into the small tube on top and test the power valve, spring should hold it up and able to press down.
