You can remove the thermostat and put it in a pan of water heat the water with a thermonter inserted and read the temp that the thermostat opens. With thermostat removed fill radiator with water and with engine running look in radiator see if water is circulating. Be careful how you open a hot cooling system and you can get severly burned by steam. Coolant under pressure raised the boiling point about 2-3 degrees for every pound pressure added. Look at rad. cap and see if the seals are in tack. If you see a lot of air bubbles in rad. when filled to top and running there may be a compression leak. You should pressure test system to see if any compression is in cooling system causing water to blow out. Also pressure test Rad. cap.
