A couple of things to try: Pull the plugs. does one look different from the others? Cleaner?. Do a comperssion check and see if you have a low cylinder. Have someone cold start the truck while you sniff the exhaust. If you get a whiff of antifreeze on start, you have a small leak into a cylinder and coolant is weeping in while the engine sits. I'd be very skeptical of a mechanic that suggests you need to replace an engine because of a head gasket and/or stuck head bolt. That's nuts. If the head bolts are studs with nuts the nut can be cut. You need another mechanic.
