Sounds completely normal to me. I have a 2001 Yukon with the 5.3, and it does the same thing. The "cats" are designed to run HOT to clean up the exhaust. About the only things that could cause an ABNORMALLY hot exhaust are late timing, or a cylinder overfueling or mis-fire issue, and the OBDII computer would be all over either of those issues RIGHT NOW, and light the MIL lamp! I think you are worrying about a complete non-issue, and have WAY to much money if you are thinking of throwing premium gas at it to counteract the hot exhaust issue!
