The low-speed adjuster is the screw closest to the engine. If it's turned in too far, the saw won't accelerate properly - i.e. it will bog down when you try to rev it up - especially when cold. With the high-speed screw - it should be turned out far enough so the saw - when revved to high speed but NOT cutting wood - runs so rich it breaks up a little - but will smooth right out when cutting wood. The saw needs to run a little rich. The 3/4 turn Low and 1 turn High settings are only to be used as initial settings for a starting point for further fine tuning.
In regard to the post about the clutch dragging and making the chain turn all the time. That too is common - but a totally different problem. When the clutch drags, the saw is idling at the proper speed - but the clutch is engaging anyway. That is usually caused a broken spring. The early clutches have three springs and all it takes is one to be broken and cause drag.
But - if I'm reading your description properly - your saw is racing at high RPMs and will NOT idle down. That is typical of the intake-manifold and hose problem. 041s were known for shaking apart, losing screws and breaking hoses. We got so - that when we sold them new - we'd take them half-apart first and Loctite all the screws. That way they held up much better. I've still got my first 030, S10, O8S and 040 from the first Stihl dealer I worked for in the late 60s along with several 041s, 031s, 051s, and 045s from the last dealer I worked for in the 80s. I also have one 041 Super which is kind of rare. They are all very rugged saws if put together properly.
