It would work fine,I have seen one used to cool an office with the diesel replaced with an electric motor. If running big amp power for an electric motor to the shop would be a problem,then it would run quite cheap on off road dieselfuel.
Many reefers are made to work as a cooler or heat pump at the flick of a switch. They would keep the cargo cold when above freezing,or reverse as a heat pump to keep it from freezing in very cold weather. With the right thermostat it would maintain any temp you desired.
