What do you mean by "shut off"- the compressor kicks off or it quits blowing cold air? If it quits blowing it could be a vacuum controlled door in the vent system that looses vacuum because of the load placed on the engine climbing the hill and resumes after the grade is pulled. Had this happen on an older pickup. Some use vacuum to control the doors in the system, others are electrical, not sure what you have.
