Like others said, be sure the engine is in tune. Ford was kind of bad about having conservative distributor curves in the '70's. Also, centrifugal advance mechanisms can stick. A decent timing light can help you check all that out. Assuming the engine is in decent shape (compression and leak-down tests show all 8 are healthy) a set of dual exhausts will help some. Putting a cross-over pipe ahead of the mufflers as well is even better. If you want to spend the money, there's now getting to be add-on fuel/air ratio meters so that you can check if the engine is running lean or rich, and have a better idea of how to change the jetting on the carburetor if necessary. The 4 bbl 351W in our '87 F250 4x4 has been adequate for what we've wanted for the last 9 years and we expect to drive it for several more. After 245,000 miles we did have a fresh long block put in. There's a real simple solution to the agony of trying to decide whether or not to rebuild or modify what you've already got: Go down to the dealer of your choice and sign up for 25,000 bucks worth of new or nearly new truck.
