My wife and I did a whirlwind tour of 7 national parks in 10 days in 2005 (enroute from California to North Dakota for my hometown centennial). We spent a couple days total in Utah, one at Zion and one at Arches. It's better than never having a chance to see them, but a feller could easily spend months there and never see it all. For Canyonlands NP, two days is probably plenty enough time to see enough to make you want to come back for more. (In case you can't tell, I absolutely loved that red rock area)
