You can pull the engine with the flywheel attached. The clutch pressure plate will come off the transmission much like you are used to seeing a torque converter come with the engine. Before starting in on this resoration, I'd do a complete survey to know what you're getting into. Don't just figgure the cost of doing the engine until you learn what it might cost to fix the transmission too. The "2/3 filled with water" in the tires was probably ballast weight. My tractor tires are filled with water mixed with calcium chloride to prevent freezing and add additional weight. Yours may only have water since it may not freeze where you are. CaCl is a salt and highly corrosive to metal. I'd get all the fluid out of those tires anyway but if it's CaCl, you will need to take it to a tire service dealer who can dispose of it for you.
