We're kind of in a similar area, as far as being up with the times. When my wife wanted to start market gardening and selling at the farmers market, I saw visions of arugula and cardoon and all sorts of strange veggies. I was pleasantly surprised to find out that the people who live around here eat pretty much the stuff we like to eat and are willing to pay a decent amount of money, as long as it is good produce and fresh.
As far as grassfed beef, there are people around here who love the idea, but really have no idea how difficult it is to actually accomplish. You really need to know what you're doing with the animals and the grass to make it work. Having the right genetics in the critters is important, too. We've finished some on grass and they did well if it was the right time of the year. The meat tasted great, but when you look at the carcass hanging there in the meat locker with all the grain fed carcasses, it sure makes you wonder.
