Mike's right, guys (and gals)! That "fresh" produce is harvested so early that the ripening process has hardly begun, and the sugars just aren't developed. They do this so they can be shipped great distances, and still be edible on arrival. Emphasis is on leaner pork, leaner means less fat and less flavor. Last three years, my wife and I have bought a pig from the livestock auction at the local 4-H fair. We know the kids who grew the pigs, and the conditions under which they were raised - then they're butchered to our specifications at a local butcher shop. We've enjoyed superb pork, and helped out a 4-H er to boot! Suggest you all look into this too.
