It has to do with the compression of the engine, the higher it is, the louder it will be, or maybe not necessarily louder but more of a thunder. Also has to do with how well the valves are seating, and even the condition of the manifold gasket. And last, a manifold that is clean inside will give a better ring to the exhaust note than a manifold wich is full of carbon and rust.
