How to flush hydraulics and WTH is this?!?!?!

Ok guys, first question is, how do I properly flush my hydraulic system, I can readily do everything (got all new hoses for free =), so I'm going to flush the lift cylinders out), except the pump. I plan to remove the resevoir cover (1 of the bolts is froze, so that sucks). Do I need to buy a new gasket? I cant imagine i would, as there is no pressure there, but anyone with experience in taking the cover off may know better. Where do I get a new hydraulic filter at, or is it just a screen i can clean and reuse? Here is why I need to clean my hydraulics as good as possible.

 At first I thought the cream color was from water, but these pics are of the oil sitting for over 3 days. Disregard the black patricles on the bottom, as I drain this from the hitch cylinder and it was quite dirty. I am confused by the nearly mayoinaise looking stuff on the bottom? Any idea? I ee no water settling out of the oil. Now I'm sure you understand why I want to do a thorough cleaning of the system.
