Largest off the shelf 240V single phase motor is a 16HP Baldor.
There comes a point where a single phase transformer from 240 to 480V or 600V and a three phase VFD supplying three phase motors becomes more economical. Allows variable fan speeds too.
There are some funky 480 or 600V single phase written pole motors up to 100HP iirc used on irrigation applications etc.
