Color Sanding Orange Peel Paint

I was wondering how to sand out a bad case of orange peel "texture" on my sheet metal, and what I can do in the future to prevent it. I was told to use 600, then 1000 grit wet/dry. Just want to be sure since I have a ton of time invested in this project up until now. I'm working on a JD styled hood and nose so there's a lot of square corners I'm concerned about sanding through. Any pointers here would be appreciated also. Thanks.
