560 ih black smoke and white hydraulic fluid

i have had my tractors clutch put in recently but now my hydraulics are squeeling .the tractor sat at the repair shop for about a year and when i went to pick it up the hydraulic pump was squeeling and the engine is blowing black smoke out the exhaust. i checked the fluid in the tranny and it looks like milk and the filter was clogged up with bugs and other black gunk .what could of happened to the fluid and where could all that debris have come from?will a fluid and filter change work?i did not run the tractor for over a min.the black smoke from the motor puzzled me as the tractor didnt smoke when i delivered the tractor to the shop a year ago.what could of happened with this tractor sitting for a year?what do i need to do for the black smoke on the engine?thanks for any replys
