H brake adjustment

Hi, I just got my new brakes linings along with one brake pinion bearing and two seals. While removing the differential carrier(the piece that the bearing and one seals goes into, I broke two thin shims so can I just use a gasket to replace these shims? My second question is: How do you set the brakes? especially the screw that is at the bottom of the brake cover? THANK YOU VERY MUCH!!
