please help clarify gear shifting

I'm new to old tractors. My only expierience up till now has been my newer Kubota with a Hydrostatic drive. I bought a Farmall A a few months ago. I have just used it for putt'n around the property. Weh I take off in first, and try to shift to another gear, it grinds even when i double clutch. A guy I work with put a lot of hours in the fields in Texas. He said these tractors are made to start and stay in a single gear; you are not supposed to shift them lke a car or truck. Is this true? Have I been needlessly punishing my tranny? If I'm going to work in second, should I take off in second, and same for 1st, 3rd, and 4th? Thanks, RobertN
