over-running coupler

I have been running an H with a bush hog for 30 years without an over riding coupler. I now also have a Super C that I bought a bush hog for. What is the function of an over riding clutch/coupler and how important is it? Also, the draw bar makes the front of the bush hog too high. What is the best way to correct front end height?
